February's 8th Wards SIZZLING Soups


Chicken soup with Danish Dumplings   -Michelle Christensen
1 whole chicken, boil in salted water till tender. Remove from pot and while it cools so you can bone it proceed with soup.
Add:  carrots, peeled & sliced, boiling 20-30 minutes.
Add: 1/2 med. onion  diced
          3 lg. sticks celery, sliced
          parsley flakes
          onion salt
          chicken boullion cube or powder
          salt & pepper to taste
Let simmer 30 - 40 minutes, add chicken
Dumplings:
         1/2 - 1 square margarine, melted
         Whip 2 -3 eggs in 4 cups milk
         Tbsp. salt
         Stir in enough flour to make a stiff dough.
Drop by spoonfuls into the boiling soup. Let simmer.


Creamy Tomato Basil Soup  -Bonnie Garcia
3-5 cloves of garlic, chopped
½ onion, chopped
8 oz cream cheese
2 cans chicken broth
5 cans tomato soup
3 cans petite diced tomatoes
1 can evaporated milk
¼ cup dried basil
Black pepper and garlic powder to taste
Saute garlic and onion in olive oil. Add cream cheese and melt over low heat. Gradually add 1 can of chicken broth until smooth. Add all other
ingredients and heat until heated through.

Zuppa Toscana Soup    -Jill Spalding
1 lb spicy Italian sausage-crumbled
½ lb smoked bacon-chopped
1 qt water
(2) 14.5 oz cans chicken broth (about 3 2/3 c)
2 lg. russet potatoes, cubed
2 garlic cloves, peeled, crushed
1 med. Onion, peeled, chopped
2 cups chopped kale or Swiss chard
1 cup heavy whipping cream
salt and pepper
Brown sausage in a pan over medium to medium high, breaking up into small pieces as it cooks. Drain sausage and set to the side. Brown bacon in a pan
over medium-high heat. Be careful not to cook crispy. Drain bacon and set to the side. Place broth, water, garlic, potatoes, and onion in a pot. Simmer
over medium heat until potatoes are tender. Add sausage and bacon to the soup. Simmer for 10 min. Add kale and cream to the pot, add salt and pepper.
Heat thoroughly.

Bread Sticks  -Brenda Kuchar
Mix together:
1 TBS yeast
1 TBS sugar or honey
1 ½ cups warm milk or water (or use 1/2 of each)
Let stand for a few minutes then mix in:
1 TBS salt
3-4 ½ cups flour
Let raise for 15 minutes. Roll out into greased cookie sheet.  Spread melted butter over the dough, sprinkle with parmesan cheese, garlic powder.  Cut into strips w/ pizza cutter.  Bake at 400 degrees for 15 min.
