3 cups fat free milk
1 can (10 3/4oz) condensed cream of potato soup
2 cups frozen Southern-style hash browns
1 cup sharp cheddar cheese (I've used mild before and it works too)
2 slices of bacon, crisply cooked, drained and crumbed (I usually make more than two slices)
1/4 cup thinly sliced green onions
Mix milk and soup in large saucepan. Stir in hash browns. Bring to boil on high heat, stirring occasionally. Reduce heat to medium-low; simmer 10 minutes, stirring frequently. Ladle into bowls. Top evenly with cheese, bacon and onions. Serve with bread or crackers.
There it is! So simple! It doesn't make much so if you have a large family you'll have to double or triple.
