5th Ward Crock Pot Creations! (part 2)

Egg and Broccoli Casserole
Makes 6 servings
24 oz carton small curd cottage cheese
10 oz package chopped broccoli, thawed and diced
2 cups (8oz) shredded cheddar cheese
6 eggs beaten
1/3 cup flour
1/4 cup melted butter
3 Tbsp finely chopped onion
1/2 tsp salt
shredded cheese optional
Combine first 8 ingredients into greased slow cooker. Cook on high 1 hr. stir, reduce heat to low cook 2 1/2 -3 hrs, or until temperature reaches 160 degrees and eggs are set. Sprinkle with cheese and serve.

Swiss Steak
2 tsp veg oil
1 1/2 lbs boneless beef round steak trimmed of fat
1 tsp salt
1/4 tsp pepper
1 med onion halved lengthwise then thinly sliced
1 med carrot shredded
1 4 oz can mushroom pieces and stems drained
1 can cream of mushroom soup
1 can 8 oz tomato sauce
Brown meat sprinkled with salt and pepper. brown well on both sides. spray crock pot with cooking spray. In cooker mix onion,carrot, and mushrooms. Cut browned meat into 4 pieces, place in cooker over vegetables. Mix soup and tomato sauce pour over beef. Cook 8 hrs low or 4 hrs on high Makes 4 servings.
